My Love Affair with Hummus.
This delicious, creamy dip has become an addiction of mine in the past couple of months. I have always wanted to make my own hummus but never came round to it because it always seemed easier to buy it in my nearest supermarket. Let me just point out how wrong that is and how easy a homemade hummus can be !
The recipe for my hummus is very simple, I have not yet ventured to beetroot, carrot or spinach hummus… You will notice that I haven’t put any clear measurements (or very vague ones) because every time I make a new batch I just eyeball it. So, now for the recipe !
Recipe :
Ingredients :
400g chickpeas in can and the juice !
Lemon
Salt
Olive oil
Tahini (if you have some but not essential)
Instructions :
*** This is an optional step but will make your hummus sooooo creamy ***
Drain the chickpeas but keep a few tablespoons of the liquid. Boil the chickpeas for 5-10 mins and drain again. Now, take the skin of each chickpea, you can do this by taking a few in your hands and rubbing them together or doing it individually.
Add the salt, olive oil, lemon juice and tahini - eyeball these doses but go easy at first.
Blend together and taste.
Add more of the ingredients if needed. I recommend the juice of one lemon for 400g of chickpeas.
Serve in a bowl with more olive oil and paprika and dip !
