How to make a healthy snack from your Pumpkin Seeds
Working from home this year means we are closer to the fridge, closer to our next snack and closer to bulging out of our jeans the next time we attempt to put them on, because, let’s be honest, you’re reading this right now in either your pyjamas, trackies or gym leggings. So, this Halloween, why not waste less and try this easy-to-make healthy snack out of pumpkin seeds.
Before you get started make sure to roll your sleeves up because it’s going to get gunky and messy.
Follow my simple recipe to create two delicious flavours of pumpkin snacks:
Step One: Gut your pumpkin!
Be sure to get every seed out of your pumpkin, the more seeds the more snacks to enjoy! We used a pumpkin scraper, grab yourself one here.
Step Two: Wash and dry your seeds
We used a colander to wash our seeds and scraped as much of the pumpkin flesh off the seeds as possible. Once this is done, lay a paper towel on a baking tray and then spread your seeds on top in order to dry them out.
You want to dry your seeds as much as possible in order to get a crunchier end result and avoid additional moisture when cooking.
Step Three: Season Baby
We have split our pumpkin seeds in half and going for two flavours, you can do the same or pick one - we loved them both so much we couldn’t choose!
Flavour One: ‘O you ‘Soy’ nice’
You guessed it, Soy is our secret ingredient here.
In a bowl mix the following:
1 x tbs Soy
½ x tbs Sesame Oil
1 x tbs Vegetable Oil
¼ Fresh Chilli - finely chopped
Salt and Pepper to season
Once the oils are combined add the seeds from one pumpkin and mix.
Flavour Two: Arriba Paprika
1 x tbs Vegetable Oil
2 x tsp Paprika
1 x tsp Garlic Powder
Salt and Pepper to season
Combine then add seeds from one pumpkin and mix
Step Four: Shake and Bake
Once both mixes have been combined ‘shaken’ then it’s time to ‘bake’ - shake and bake baby!
Spread out your seeds onto two separate baking trays sitting on baking paper. Make sure the seeds are spread out so that each gets a chance to bake and crisp.
Bake your seeds at 180ºC for 20 - 25 minutes keep an eye on them whilst they’re cooking and shake every now and then to ensure a full bake! Seeds are ready when they have changed colour and crisped up.
Step Five: CONSUME
